Ingredients

  • 8 garlic cloves
  • Salt
  • 1 pint/500 ml vinegar

Method

Crush the garlic cloves with a little salt. Bring vinegar to boiling point and pour over the garlic. Put into a jar, cool, cover and leave for at least 2 weeks. Strain and bottle. Use for salad dressings and mayonnaise.
