The blooms should be picked on a dry day when they are open, and all stalks should be removed. Press into a measuring jug to obtain correct quality. Wash them thoroughly, and put them in an aluminium or steel container together with 6 pints/3 litres cold water. Bring this to the boil and simmer gently for 10 minutes.
