Ingredients

  • 6 lb/2.5 kg ripe juicy blackberries
  • 6 oz/150 g sugar
  • 1 oz/25 g root ginger
  • Rind of 1 lemon
  • 3 pints/1.5 litres whisky

Method

Pick over the fruit and put into a jar. Crush the fruit lightly and add the sugar, bruised ginger, thin lemon rind and whisky. Seal tightly and leave for 3 weeks. Filter into bottles.
