  • Morello cherries
  • Cloves
  • Sugar
  • Brandy

Method

Wipe the cherries and take out the stones from half of them. Crack the stones and extract the kernels. Pack the cherries into jars, and add 10 cherry kernels, 2 cloves and 3oz/75g sugar to each 1lb/450g cherries. Fill up with brandy and seal tightly. Leave for 12 weeks and filter into bottles.
