  • Sugar
  • Vanilla pods
  • Lemon peel
  • Cinnamon stick
  • Root ginger


Half-fill jars with damsons. In each jar put 4oz/100g sugar, 1 vanilla pod, 2in/5cm lemon peel, a small piece of cinnamon stick and of root ginger to each 1 lb/450g fruit. Fill up with brandy and seal tightly. Leave for 6 months. Filter into bottles.
