  • Rind of 6 lemons
  • 2 pints/1 litre water

Method

Take off the lemon rind in strips, avoiding white pith. Put into a pan with water and sugar and heat gently until the sugar has dissolved, stirring often. Strain and add the lemon juice. Mix well and pour into bottles. Sterilize as for other fruit syrups.
