Method

Use a selection of fruit, but avoid citrus fruit, apples, bananas and pears. The fruit must be sound, whole and ripe, and it is possible to use just a few choice fruits at a time as they come into season, rather than overloading the rumpot with fruit. Use a large stone crock or glass preserving jar. Wipe the fruit gently and do not peel or stone. Melon is the only fruit which should be peeled,
