Ingredients

  • 2 lb/1 kg fresh lime shell
  • 1 lb/450 g salt
  • ½ oz/15 g cream of tartar
  • 5 gallons/22 litres boiling water

Method

Pour the water over the lime shell and stir the mixture two or three times daily for a few days. Add the salt and allow to settle for a few hours. Pour off the clear liquid into the preserving jar and stir in the cream of tartar. Use as water-glass solution.
