It’s Still Difficult to find fish bones for stock except in coastal areas, but fish glazes are now available in most supermarket freezers. Still, the motivated cook will manage to make up his or her own fish stock. Bottled clam juice does not make a good substitute, though mussel broth or fresh clam broth will do.
