Ingredients
- 12 to 30 dried red chilies, with stems and seeds removed
- 3 pieces galanga
- 3 pieces
Method
- Soak the chilies, galanga, kaffir lime, and lemongrass in warm water for 30 minutes. Drain and discard the water. Julienne the galanga.
- Chop the soaked ingredients finely and pound to a paste with the remaining ingredients using a mortar and pestle or a food processor.
