  • 12 to 30 dried red chilies, with stems and seeds removed
  • 3 pieces galanga
  • 3 pieces


  1. Soak the chilies, galanga, kaffir lime, and lemongrass in warm water for 30 minutes. Drain and discard the water. Julienne the galanga.
  2. Chop the soaked ingredients finely and pound to a paste with the remaining ingredients using a mortar and pestle or a food processor.
