Gênes is the French name for Genoa and a génois is a Genoese. So this pinnacle of French cakes is nominally Italian.
Don’t believe it. The classic French repertoire is full of cosmopolitan geography, Maltese sauce and Norwegian omelet, almost all of it whimsical or poetic (the omelet is like a Baked Alaska, therefore cold, therefore like Arctic Norway).
