An entire book could be written about this deceptively simple all-American dish. The first chapter would trace the origin of macaroni to a Sicilian dialect term from the Middle Ages, showing its probable connection with medieval Arab cookery and taking another swipe at the myth of Marco Polo as the Johnny Appleseed of pasta. Chapter 2 would look at Italian antecedents of our mac and cheese, since it must have begun as a transplant of some recipe for macc
