Indian breads are not breads in our sense at all. They are mostly made with wheat and some are leavened, but they are individual “slices,” and don’t come in loaves. Like pita and Mexican tortillas, many of them respond to a need for a “utensil” to bring food to the mouth in a cuisine without tableware to assist eating.

Pooris are no more typical of Indian bread style than any other, perhaps less so. But they are the most fun to make of all the basic types. You fight against t
