The phoenix is the traditional symbol of the bride or the woman of nobility and, quite simply, these dumplings, called “phoenix eyes,” are shaped to look like women’s eyes.

Ingredients

  • pounds shrimp, shelled, deveined, washed, dried, and quartered 1 to 1½ teaspoons salt, to taste

Method

  1. Place shrimp in bowl of electric mixer. Add salt and blend for 5 minutes.

  2. Add egg white and blend for 2 minutes.

  3. Add tapioca flour and blend for 1 minute.

  4. Add sugar, pork fat, sesame oil, oyster sauce, white pepper, and scallions and blend thoroughly for 5 to 7 minutes.
