This is perhaps the most famous dim sum outside of China—that pork-filled baked bun called guk char siu bau. People who are not even familiar with the term “dim sum” know “pork buns,” and they are eaten daily by the thousands. Though I have experimented with different fillings for these baked buns, tradition prevails, and roast pork buns remain my favorite.
