Scallion pancakes are a very special Shanghai dim sum. The Cantonese have nothing to compare with it. When the Cantonese talk about dim sum, such delicate preparations as siu mai and har gau come to mind. But to somebody from Shanghai, dim sum is the lusty and rich scallion pancake.

Ingredients

  • 1 cup vegetable shortening (Crisco preferred)
  • 3 cups scallions, ends discarded, washed, dried, and chopped finely

Method

To prepare filling

In a bowl, combine shortening, scallions, salt, and sugar and mix thoroughly into a paste. Reserve in refrigerator.
