In Peking these half-moon-shaped dumplings are called “chiao-tzu,” which is modern Chinese for the Cantonese “gau ji.” In Shanghai they are often referred to as “wor tip,” two words which mean “pot” and “stick,” and they are therefore known as “potstickers,” a most unfortunate name in my view, for something that tastes so good. I prefer to call them by their Cantonese name, gau ji, which literally translated is “little dumplings.”
