Spring roll skins can be bought packaged—in either round or square shapes—in Chinese groceries and occasionally in grocery stores or supermarkets. The so-called “Shanghai” spring roll skins, which are whiter and thinner, are preferable to the thicker, darker-colored, yellowish skins. The thin skins come in 4-ounce packages of 10 skins; the thicker skins come in 1- or 2-pound packages. Both are often labeled “egg roll skins,” which is a misnomer.
