Fresh rice noodle, called “sah hor fun” by the Cantonese, comes in huge sheets and is one of the more difficult dim sum ingredients to obtain. Made from rice powder and water, it is available fresh only from bean-curd and rice-noodle factories in Asian areas of cities, or in shops that buy it specifically for sale on a specific day. It is strong and elastic, far more so than any rice noodle you might attempt to make at home. If you find that rice noodle is unavailable, you can still use thi
