Some people prefer their turnip cake sliced thin and then pan-fried—and it is delicious this way. If you wish to pan-fry it, prepare the cake a day before you plan to serve it and refrigerate it overnight. Eliminate the sesame seed and the scallion garnishes, since both will “pop” fiercely during the frying process. You may, however, garnish the pan-fried turnip cake with coriander.
