  1. In a large mixing bowl, place the dried lotus seeds. Fill the bowl with enough warm water to cover the seeds. Allow them to soak for 6 to 8 hours, or overnight.

  2. Drain the water from the soaked lotus seeds. Place the lotus seeds in a large pot, together with 5 cups of cold water. Cover the pot, and bring the water to a boil. Reduce the heat, partially unc
