    Method

    Crowdy differs from porridge in that it is made from finely-ground meal and no cooking is needed if boiling water is used. For one person, put three tablespoons fine oatmeal into a bowl and add salt to taste. Pour in boiling water and stir briskly until it is as wet as you want it. Leave the crowdy to stand for a minute or two, and it will have swollen. Put a knob of butter in the centre of the bowl.

    The crowdy should be eaten by taking a little on a spoon and dipping it into a mug of cold milk.
