  • 1 large potato
  • 1 tablespoon grated cheese
  • 1 egg
  • Flour
  • Herbs and seasoning as in recipe
  • Fat for frying


    Peel the potato and grate the raw flesh. Mix this with the cheese and egg. Add enough flour to make a soft dropping consistency like a thick pancake mixture. Season to taste with salt and pepper and a pinch of mustard powder. Add some chopped fresh herbs such as chives, thyme, sage or parsley. Fry in spoonfuls in hot fat, and serve very hot.
