  • 8 eggs
  • 2 fl oz single cream
  • 1 oz. plain flour
  • 8 oz. thin rindless bacon rashers
  • Made mustard


    Beat the eggs with the cream and flour to make a batter. Fry the bacon crisply, and remove from the pan. Pour half the batter into the pan and when it is just set, lay the bacon rashers on top, and cover with the remaining batter. When this is set, turn and brown the other side. Serve very hot with mustard.
