  • 1 lb haricot beans
  • 1 medium-sized onion
  • 1 oz butter
  • 1 oz flour
  • ½ pint stock


    Soak the beans overnight in cold water and drain them. Chop the onion finely and cook it in the butter until lightly browned. Work in the flour and stock and simmer until the liquid thickens. Add to the beans and simmer until they are soft.
