  • 2 grouse
  • 4 oz butter
  • 8 oz. fresh cranberries


    Hang the grouse to taste, until the feathers loosen easily. Pluck and truss them, and fill the cavities with the butter and cranberries. Roast at 450°F, 230°C, gas mark 8 for twenty-five minutes.
