  • 4 herrings
  • 6 potatoes
  • 2 cooking apples, peeled, chopped and dipped in mild vinegar

Method

Clean the herrings and cut them into fillets. Peel the potatoes and cut them into thin slices like crisps. Arrange these potato slices round the sides and bottom of a greased ovenware dish. Put a layer of herring in the dish, and then a layer of peeled and finely-chopped apple. Put on another layer of herrings and apples, then herrings, and finish with pieces of potato as a top layer.
