There are several different ways to make even the basic, simple soft cheese we call Farmer’s Cheese, Pot Cheese, Clabber Cheese, Cottage Cheese, Crowdie and so on. This is just one of them.

Put sour, whole or skimmed milk in a warm place until thick. Add half teaspoon salt to each pint of milk. Put into a muslin bag and leave to drain overnight. Press between two plates for an hour, then mix with a little fresh cream to serve. Keep refrigerated.
