  • 8oz puff pastry
  • 8oz cottage cheese
  • 6oz sugar
  • 6 egg yolks
  • 2oz butter
  • pinch of nutmeg and Salt
  • Grated rind of two lemons


    Line small tart tins with the pastry. Sieve the cheese and mix with all the other ingredients, and put into the tart cases. Sprinkle the top of each with a mixture of chopped candied peel, currants and sultanas. Bake at 375°F, 190°C, gas mark 5 until pastry is golden, about twenty minutes.
