  • 1oz butter
  • 1 teaspoon olive oil
  • 8oz Lancashire cheese
  • 4 eggs
  • Pepper


    Melt the butter and oil in a shallow dish on top of the stove. Cut the cheese into slices, reserving about one ounce for grating. Put the cheese into the dish and melt cheese gently. Break the eggs on top. Cook at 350°F, 180°C, gas mark 4 for eight minutes. Sprinkle with pepper and grated cheese, and brown under the grill.
