  • 6oz shortcrust pastry
  • 1oz butter
  • 1 large onion
  • 1lb cottage cheese
  • 2 eggs
  • 2oz chopped ham
  • Salt and pepper


    Line an eight-inch flan ring or pie plate with the pastry. Melt the butter and fry the finely-chopped onion until golden. Sieve the cottage cheese finely, and mix it with the beaten eggs, ham, salt and pepper. Pour into the pastry and bake at 375°F, 190°C, gas mark 5 for fifteen minutes, and then reduce the heat to 325°F, 170°C, gas mark 3 for forty-five minutes. Serve hot. Finely-chopped mushrooms, or some chopped parsley may be used instead of the ham, or can be added to the recipe if liked.
