  • 1½lb potatoes
  • 4 tablespoons milk
  • 1egg
  • 1 teaspoon dry mustard
  • 6oz grated cheese
  • 3 tablespoons chopped parsley
  • Salt and pepper


    Cook the potatoes until they are tender, and then drain them. Mash them with the milk, egg, mustard, half the cheese, the parsley, salt and pepper. Put into a greased ovenware dish and sprinkle with the remaining cheese. Bake at 425°F, 220°C, gas mark 7 for fifteen minutes until golden-brown.
