  • 4oz mild cheese
  • 2oz butter
  • 2 tablespoons (double) cream
  • 1 egg


    Cut the cheese in very thin slices and put it into a thick pan with the butter and cream. Stir the mixture over very gentle heat until it is smooth. Beat the egg lightly and stir into the mixture. Pour into a fireproof dish and brown under the grill. Serve with dry toast.
