  • 2 eggs
  • 4 tablespoons creamy milk
  • 1 teaspoon chopped parsley
  • Salt and pepper
  • ½butter


    Beat the eggs and milk with the parsley, salt and pepper. Put the butter into an ovenproof dish and heat it in the oven until just melted. Pour into the egg mixture and bake at 375°F, 190°C, gas mark 5 for ten minutes. Serve hot with toast.
