  • 1lb plain flour
  • 1 level teaspoon Salt
  • 1 level teaspoon bicarbonate of soda
  • 1oz lard
  • ½ pint butter milk or milk


    Sift the dry ingredients into a basin and rub in the fat. Make a well in the centre and stir in enough buttermilk or milk to give a soft spongy dough. Knead lightly on a floured surface. Shape quickly into a round cake about two inches thick. Put on a floured baking sheet and score the top lightly three times with a sharp knife. Bake at 400°F, 200°C, gas mark 6 for thirty-five minutes, or until well risen.
