  • 8oz self-raising flour
  • pinch of Salt
  • 2oz butter
  • 2oz sugar
  • 2oz mixed dried fruit
  • 1 egg
  • 5 tablespoons milk


    Sieve the flour and salt into a bowl and rub in butter. Add the sugar and dried fruit. Beat egg with the milk. Add most of the liquid to the mixture to make a fairly soft dough. Divide the dough into eight and lightly knead each piece into a round. Place scones overlapping to form a ring on a greased baking tray. Brush the tops only with the remaining milk and egg liquid. Bake at 425°F, 220°C, gas mark 7 for 20-25 minutes until golden-brown and cooked through. Cool on a wire tray.
