  • 4oz mixed dried fruit
  • 4oz caster sugar
  • ¼ pint hot tea
  • 2 tablespoons chunky marmalade
  • 1 egg
  • 8oz self-raising flour


    Place the fruit, sugar and tea in a bowl. Leave to stand for at least six hours, but preferably overnight. Add the marmalade and egg, sieve in the flour and then mix well. Turn the mixture into a greased and base-lined lib-loaf tin and bake at 350°F, 180°C, gas mark 4 for 50-60 minutes, until cooked. Test with a skewer. Allow to cool, and serve thinly sliced and spread with butter.
