Ingredients

  • 8oz plain flour
  • ¼ teaspoon Salt
  • 1 teaspoon

Method

Sieve the flour, salt and bicarbonate of soda into a bowl. Put the butter, sugar, peel and caraway seeds into another bowl and pour over them the hot water. Stir well and leave to cool. Beat up the egg and fold this into the liquid mixture. Add the sieved dry ingredients and beat very hard. Pour into a greased 1lb-loaf tin, and bake at 375°F, 190°C, gas mark 5 for fifty minutes.
