  • 8oz mixed dried fruit and candied peel
  • 3oz clarified beef dripping
  • 5oz brown sugar
  • pint water
  • 8oz wholemeal flour
  • 1 teaspoon baking powder
  • pinch of nutmeg
  • pinch of cinnamon
  • pinch of mixed spice
  • ½ teaspoon bicarbonate of soda


    Put the fruit in a heavy pan with dripping, sugar and water, bring to the boil and simmer for ten minutes. Leave to cool, then pour into the rest of the ingredients which have been sifted together. Blend well but do not beat. Put into a greased six-inch cake tin and bake at 350°F, 180°C, gas mark 4 for 1¼-1½ hours.
