Lemon Cake

• 4oz butter
• 6oz caster sugar

Mix butter, sugar, flour, eggs, salt, milk and lemon rind together and bake in a lib-loaf tin for one hour at 350°F, 180°C, gas mark 4. Combine the lemon juice and sugar and pour over the cake while still hot.
