  • 6oz butter
  • 6oz caster sugar
  • 3 eggs
  • 6oz self-raising flour
  • Grated rind of one lemon
  • Grated rind of one orange
  • 3 drops vanilla essence
  • Juice of half lemon
  • Juice of half orange
  • Icing sugar


    Cream together the butter and sugar. Gradually work in the beaten eggs, alternately with the flour. Add the grated fruit rinds and the essence, and pour into a greased rectangular tin. Bake at 375°F, 190°C, gas mark 5 for thirty minutes. Cool and ice with the fruit juices mixed with enough icing sugar to make a spreading consistency. Cut in squares to serve.
