  • 4oz flour
  • pinch of Salt
  • ¼ teaspoon ground ginger
  • ¼ teaspoon mixed spice
  • ¼ teaspoon cinnamon
  • teaspoons bicarbonate of soda
  • 2oz butter
  • 2oz caster sugar
  • level tablespoons golden syrup

    Method

    Sift the flour, salt, ground ginger, cinnamon, spice and bicarbonate of soda into a basin. Rub the butter into the dry ingredients. Mix in the sugar. Melt the syrup and stir it into the mixture, to make a soft dough. Roll the mixture between the hands into balls about the size of marbles and place them on greased baking trays with a space between them to allow them to spread. Bake the fairings at 350°F, 180°C, gas mark 4 for ten minutes. Take the tray out of the oven and hit it on a solid surface to make the fairings crack and spread. Then put them back into the oven for another five minutes to finish baking.
