Mince the beef and bacon together coarsely. Mix with all the other ingredients. Put into a damp cloth and tie up in a sausage shape. Bake the sausage in a tin at 350°F, 180°C, gas mark 4 for one and a half hours. Remove from the oven and leave until cold under weights. The sausage may be finished with a light aspic glaze, or it may be scattered with crisp brown breadcrumbs.
