  • 4oz butter
  • 3oz light soft brown sugar
  • 3 tablespoons thick unsweetened apple sauce or purée
  • 1 egg
  • 5oz self-raising flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 3oz sultanas
  • 3oz chopped dates

    Method

    Cream together the butter and brown sugar until light and fluffy. Beat in the egg and apple sauce. Stir in the dry ingredients and the dried fruit to make a thick batter. Turn into a greased pudding dish and bake at 350°F, 130°C, gas mark 4 for one hour. Serve with custard or cream.
