Method

Sift the flour and salt together. Stir in the suet and mix with enough cold water to make a firm dough. Roll out this dough and line a pudding basin, leaving enough for a lid. Peel and core the apples and cut them into slices. Put them into a saucepan with the butter, lemon rind, sugar and jam and heat gently until the apples soften but do not break up.
