  • 1lb self-raising flour
  • 7oz lard
  • ½ teaspoon

Method

Rub together the flour, salt and lard to make fine crumbs. Stir in the sugar. Stir in prepared gooseberries, chopped apple, halved plums or chopped rhubarb. Mix with sufficient milk and water to make a soft dough which will drop easily into a greased basin. Cover with greased paper, then foil. Steam for two hours. Serve with fresh cream or smooth, creamy custard.
