Simmer the gooseberries with the sugar and very little water in a covered pan until the skins burst and the fruit is pulpy. Remove from the heat and add the lemon juice. Warm the milk, and sprinkle on the semolina. Bring just to the boil, then simmer for three minutes. Take off the heat and stir in the gooseberries. Tint with a little green vegetable colouring if liked. Pour into a bowl and ser
