  • 1lb gooseberries
  • 8oz sugar
  • 1 dessertspoon orange-flower Water
  • ¾ pint single cream


    Simmer the gooseberries with the sugar in quarter pint water until pulpy. Put through a sieve and cool. Mix with the orange-flower water and cream. Chill before serving in a stemmed glass bowl; decorate with candied orange peel or angelica strips.
