Ingredients

  • 1lb Demerara sugar
  • ΒΌ pint Water
  • 2oz butter
  • 3 drops oil of peppermint
  • pinch of cream of tartar

    Method

    Put all the ingredients into a heavy pan and boil until a little of the mixture will form a fine thread when dropped into cold water. Remove from the heat, cool for one minute and pour on to an oiled surface. When it is cool enough to handle, pull the mixture into long strips. Pull half the mixture until it becomes much paler than the other pieces. Twist the two colours together, and cut into short pieces.
