  • 1lb sugar
  • Good ⅛ pint milk
  • 1oz butter
  • 8oz plain chocolate


    Mix the sugar and milk and cook in a double saucepan until it is a thick paste. Add the butter and chocolate broken into small pieces. Now put the saucepan directly on the heat and cook very gently until the sugar and chocolate are completely melted. The reason for using the double boiler is that, if the fudge is boiled before this stage, it will crystallise. Boil for five minutes, stirring all the time. Take off the heat, and beat hard until the fudge is thick. Pour into a greased tray, and cut into squares before it is completely cold.
